This study was carried out for two months in the aquaculture farm “Acuicultura y Pesquera Calicanto S.R.L.” located in Ucayali; with the objective to evaluate the effect of the inclusion of different lipid sources in the diet on the fatty acid profile in Piaractus brachypomus fillet, four sources of oil were used; palm, corn, soy and fish oil, to elaborate diets that comply with the nutritional requirements of paco (Piaractus brachypomus). These four diets and a commercial diet were fed to pacos. The fatty acid profile was determined for oils, diets and paco fillets (before and after the experiment). The levels of omega 6 polyunsaturated fatty acids (n-6 PUFA) such as arachidonic acid (AA) and omega 3 polyunsaturated fatty acids (n-3 PUFA) such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) were analyzed. The best PUFA profile in paco fillets (2,11; 4,64 and 7,0% AA; EPA and DHA respectively) was obtained with the diet elaborated with fish oil, however, the best vegetable oil that influenced the increase of PUFA profile in paco fillet (3.11, 0.82 and 3.71% of AA, EPA and DHA) was palm oil. At the beginning of the experiment, the n-6 / n-3 ratio in the paco fillet was 11.95 / 1, this indicates a higher proportion of n-6 acids in relation to n-3 acids. At the end of the experiment with the different diets, the n-6 / n-3 ratios improved to values between 6.11 - 1.11 / 1, with the best ratios 1.11 / 1 and 3.40 / 1 obtained with fish oil and palm oil, respectively. Which constitute an indicator of the nutritional quality of this fish and the possibility of considering it as a functional food. It was demonstrated the ability to improve the PUFA profile in paco fillets.
