The National Agricultural Production and Sales Survey was an activity developed by the General Directorate of Agrarian Information of the Ministry of Agriculture, whose objective was the generation of information for the decision making of different entities related to the agricultural and productive sector; among them, the different directorates and offices in charge of the generation of policies and guidelines aimed at improving production and making information available to other entities linked to research, producing companies in the agricultural and agroindustrial sector. It should be noted that this activity was carried out from 2002 to 2006 in 33 valleys of the Peruvian coast, and information on production and marketing channels for different agricultural products was collected. The purpose of this work was to analyze the production and commercialization of the vine and asparagus and its connection with the processing of these inputs in the food industry in representative valleys of the Peruvian coast, mainly located in the regions of Lima and Ica. The identification of the strategic places for the commercialization of food inputs in the industry translates into the subsequent safety, quality, costs and yields of the food manufacturing processes.
