The objective of this research was the physical-chemical, microbiological and sensorial characterization of bee honeys (Apis mellifera L.), produced in six zones representative of secondary forests of Campo Verde and Pucallpa (Nueva Requena, Santa Rosa, Pallares del Ucayali, San Pedro, Hierbas Buenas and Señor de los Milagros). The average values of the main physicochemical characteristics were the following: electrical conductivity 0,183 mS/cm, refractive index 1,4905 at 20 °C, Brix degrees 79,58 percent, humidity 18,4 percent, total solids 81,60 percent, reducing sugars 65,99 percent, apparent sucrose 4,10 percent, free acidity 36,13 meq/kg, pH 3,88, ashes 0,15 percent, hydroxymethylfurfural 45,76 mg/kg and diastase of 29,45 ID. These indicate that the majority of honeys fall within the ranges allowed by national and international quality standards, with the exception of honeys from the town of Hierbas Buenas, which has a low percentage of reducing sugars; 62,70 percent; while the localities of San Pedro with sucrose index of 5,16 percent and the locality of Santa Rosa with free acidity of 51 meq/kg presents values above the recommended. It was found that the activity of glucoxidase was between «regular» and «abundant», with an average of «abundant». The microbiological characteristics showed the «absence» of microbial contamination and according to the sensory characteristics (general appearance, taste and consistency) the honey was described as «good».
