This work of professional sufficiency demonstrates the author's competencies to carry out the improvement project entitled: “DEVELOPMENT OF AN EVALUATION MODEL OF SUPPLIERS OF FOOD CONCESSIONAIRE SERVICES FOR CONSTRUCTION WORKS CAMPS“, whose main objective was to achieve the reduction days lost due to gastrointestinal problems in workers. For this, it was necessary to determine the level of compliance with the current hygiene and food safety regulations by suppliers, identifying the main causes of non-compliance and defining an improvement plan for the treatment of said deviations, within which a new continuous evaluation model to the suppliers of food concessionaires, which includes the selection of the supplier, the categorization and the application of differentiated controls according to their level of risk in providing safe food to the workers of the company “SESMEC Contratistas Generales S.A.”, the which is dedicated to the construction of infrastructure works for the Mining, Ports, Railways, Hydrocarbons sector. As a result of this improvement, it was possible to reduce by 83% the indicator of days lost per million days worked, exceeding the expected goal of 70% reduction, thus improving the health and safety conditions of workers, also achieving the reduction costs and avoiding potential lawsuits and / or penalties to the organization.
