Abstract: El presente trabajo permitió evidenciar la proyección y ejecución de una nueva línea de envasado PET con condiciones ultra higiénicas y procesos inocuos a fin de obtener una bebida nutritiva de mayor calidad reduciendo las concentraciones del conservante en la bebida final. El alcance implica desde la recepción del producto semi elaborado (Maltin Power Filtrada) hasta la entrega del producto final con el extracto establecido. Este trabajo abarcó desde cómo se determinaron las condiciones que debe presentar el área de trabajo, tales como: las capacidades de tanques, circuitos de limpieza, estructuras y layout de la planta; hasta los procesos que exige el producto final como la pasteurización flash y la pasteurización túnel, entre los más resaltantes; así como determinar los equipos necesarios para el proceso y establecer las frecuencias de las diferentes limpiezas. Fue también parte de la implementación de procesos la determinación de los parámetros fisicoquímicos y microbiológicos del producto final así como los diversos procedimientos para obtenerlos: tales como acidez, turbidez de agua, pH y extracto. A su vez, se deseó mostrar la puesta en marcha del proyecto en donde se obtuvieron las velocidades ideales de cada proceso y la creación de las diferentes recetas de trabajo a nivel de limpieza y producción. Así como también se estableció los procesos de verificación y control para validar lo propuesto en el producto final. En lo que se refiere a gestión, se observó la creación del manual HACCP de acuerdo al alcance de la planta y la determinación de los Puntos Críticos de Control.
The present work made it possible to demonstrate the projection and execution of a new line of PET packaging with ultra-hygienic conditions and innocuous processes in order to obtain a nutritious drink of higher quality reducing the concentrations of the preservative in the final drink. The scope involves from the reception of the semi-finished product (Maltin Power Filtered) to the delivery of the final product with the established extract. This work ranged from how the conditions that the work area should present were determined, such as: tank capacities, cleaning circuits, structures and layout of the plant; up to the processes demanded by the final product such as flash pasteurization and tunnel pasteurization, among the most outstanding; as well as determine the necessary equipment for the process and establish the frequencies of the different cleanings. It was also part of the implementation of processes the determination of the physicochemical and microbiological parameters of the final product as well as the various procedures to obtain them: such as acidity, water turbidity, pH and extract. At the same time, the start-up of the project was expected to be shown, where the ideal speeds of each process were obtained and the creation of the different work recipes at the cleaning and production level. As well as the verification and control processes were established to validate the proposed in the final product. With regard to management, the creation of the HACCP manual was observed according to the scope of the plant and the determination of the Critical Control Points.
