Within the process of making chocolate, the refining-conching stage is crucial in the development of sensory characteristics and product quality, it also implies a stage that, in comparison to the other stages, demands high cost for its energy consumption, and maintenance. The aim of this work was to determine the optimal refining-conching time of dark chocolate produced by Theobroma Inversiones company, by applying the method of Non-Significant Variation in Kinetics (NSVK). Physical properties of the chocolate, such as particle size (by micrometer and image analysis), viscosity and yield stress were evaluated throughout the refining-conching process of the company (20 hours), in two-hour intervals. In order to compare the optimal treatment with the conventional one carried out by the company, sensory evaluation was carried out by trained judges, and no significantdifferences were found. It was obtained that, using the VNSC method, the optimal refiningconching time was 16 hours, since it did not show significant differences with respect to the process that takes 20 hours.
