Yacon (Smallanthus sonchifolius Poepp. & Endl) is an Andean root whose consumption brings health benefits due to its high content of fructooligosaccharides (FOS), which act as prebiotics in the digestive tract. The study target was the evaluation of blanching and drying operations to obtain yacon flour aimed to FOS’s extraction with technological purposes of application. Firstly, the best blanching treatment using different slice thicknesses (5, 10 and 20 mm), techniques (boiling and steam) and blanching times (2, 4 and 6 min) was defined and the influence on content of dry matter, FOS, sugars (fructose and glucose) and enzymatic activities of peroxidase (POD), polyphenol oxidase (PPO) and fructan 1exohydrolase (1-FEH) was studied. Later, yacon flour was obtained by applying the best blanching treatment which involved a conditioning in calcium chloride solution to one percent for five minutes and hot air drying at three different temperatures (50, 65 and 80 °C). At this stage, the influence on color, FOS content, sugars and 1-FEH residual activity was evaluated. Blanching by boiling for 6 min with a slice thickness of 5 mm was chosen because this treatment showed no significant differences (p <0.05) compared with fresh sample regarding to FOS content and reducing sugars (retention rates of 99.7 and 104.6 percent, respectively); also, samples reached low levels of POD, PPO and 1-FEH residual activity (2.1, 6.6 and 4.2 percent, respectively). Under the above conditions and considering drying temperature at 65 °C, yacon flours were obtained with the following color parameters L* = 58.4, a* = 1.8 and b* = 21.9; FOS content of 49.2 percent and no 1-FEH residual activity.
