The mango is one of the fruits of greater abundance in the country, it is marketed as fresh fruit and a part is processed in the obtaining of industrialized foods, between 40 to 60 percent of the fruit is discarded as waste. The purpose of this research work was the use and use of mango seeds that are discarded as organic waste from Kent variety mango, by extracting and characterizing the almond fat, generating profits, added value and reducing the impact environmental. Within the applications of the fat of the mango almond, highlighted the food industry, pharmaceutical and cosmetic. The research work was developed in the laboratories of the Faculty of Food Industries of the UNALM, the mango seeds were collected as waste from a processing plant of frozen chopped fruit, the almonds were extracted and dried, after its conditioning it was proceeded to the mechanical extraction of fat by press expeller. A Completely Random Design was carried out, with a factorial arrangement of 2 x 3, having as response variable the performance of the extracted fat, the factors were: the internal diameter of the outlet nozzle of the press chamber (mm) and the speed of rotation of the Endless screw (rpm). The highest yield was 6,01 percent pure fat, with treatment four: 6 mm nozzle and 20 rpm. The results showed that the fat of the mango almond contains: acidity index 1.36; iodine value 41,2; saponification index 199,5; refractive index 1,461; melting point 34,9 and color parameters L*, a*, b*: 60,08; -4,41 and 10,11; respectively. These results are similar to studies from other countries and close to the corresponding characteristics of cocoa butter.
