In this research estimated the useful life of green coffee and parchment coffee in these followings packaging: jute, superbolsa (polyethylene) more jute and trilaminate (PET, aluminum and LDPE), by accelerated tests using as quality factors: the color vector, acidity, expressed as chlorogenic acid, moisture percentage according to the deterioration of the coffee bean and sensory evaluation was performed on green coffee and parchment coffee roasted with four specialized tasters called tasters Q, according to Premium quality roasted coffee. The study was conducted in the typica Arabica variety obtaining green coffee and polished parchment coffee. The lifetime was determined by accelerated tests; where green coffee and parchment coffee stored in packaging jute, jute and trilaminated superbolsa more cameras with different temperatures and times: at 40° C for 81 days; 50° C for 48 days and at 60° C for 25 days. Microbiological tests were conducted during the period of 12 months in the different presentations of coffee stored at room temperature with a relative humidity of 60-65 percent in the jute packaging. The results in different quality factors assessed, indicate that there are no statistically significant differences when coffee is stored in green beans or parchment. The factor that limits the time of the life of green coffee or parchment is the sensory evaluation which was obtained for green coffee or parchment stored in jute time of two months, stored superbolsa more jute in five months and the trilaminated packaging, 10 months. The best packaging for storing green coffee or parchment to a significance level of 0,05 is the trilaminated.
