The objective of this work was the elaboration and implementation of the food safety plan according to the guidelines of the new Food Safety Modernization Act (FSMA), which focuses on the identification of preventive controls in all the process areas. This research covers the processing of Andean grains in the agro-export plant, which are sent to the United States. The purpose of this plan is to improve the safety and quality of processed foods, guaranteeing the reduction of the risk of food contamination within the production plant; In addition, this implementation was necessary to comply with the requirements and regulations given by the FDA (Food and Drug Administration). For the development, the flowchart was elaborated and described in a very detailed way, to ensure that all the steps of the process can be subsequently evaluated, and all possible hazards can be identified. Then, the evaluation of preventive controls was carried out, identifying seven controls: three controls of the supply chain at the reception stage, with the presence of aflatoxins and pesticides being one of the main dangers. In addition, process control was found in fumigation, storage, selection and drying stages, managing to control all the stages of the Andean grain line, guaranteeing safe and quality products for foreign customers.
