The effect of modified atmosphere packaging (MAP, 60% CO2 and 40% N2), vacuum packaging (VP) and air (A) were evaluated and compared on physico-chemical, microbiological and sensorial indicators in fresh anchovy cut HGT during refrigerated storage at 1-1.5 °C for 14, 11 and 7 days. The contents of N-TMA, N-BVT, histamine, K value, mesophilic Aerobic and Psychrophiles were measured during storage. Packed samples A obtained significantly higher mean values for TMA, BVT, histamine, mesophilic Aerobic and Psychrophiles to compare the samples MAP and VP; between MAP and VP, the differences were not significant. For the K value evaluated treatments produced the same effect. Microbiological results also indicated that there was lack of St. aureus, Salmonella spp. and Shigella during storage time. Sensory appearance and texture of raw fish samples was evaluated, while smell and flavor on cooked fish; MAP samples obtained significantly on average better grades followed by VP samples and the lowest ratings were for the samples packaged A. The shortest shelf life was obtained from sensory evaluation and was 10, 7 and 4 days MAP sample, VP and A, respectively. It is the appearance attribute that limited shelf life of the three treatments evaluated.
