The consumption of polyphenols, specifically flavonoids, has been associated with the plasma increase of n-3 long chain polyunsaturated fatty acids (LC-PUFA) in rats and humans; the biological mechanisms underlying the participation of flavonoids in the metabolism of n-3 LC-PUFA have not been completely clarified. The aim of this thesis is to evaluate the oral supplementation of chia (Salvia hispanica L.) oil rich in α-Linolenic acid (ALA) and the dietary addition of purple corn extract (PCE) on the gene expression of the sterol regulator y element -binding protein 1 (SREBP-1), peroxisome proliferator-activated receptor alpha (PPAR-α), Delta 5 and 6 desaturases (Δ5D and Δ6D) and the activity of these enzymes in the liver. The gene expression of SREBP-1, Δ5D and Δ6D was evaluated in the mammary gland. Thirty-six female Sprague Dawley rats were used and supplemented with olive oil (OL), chia oil (CH), olive oil and PCE (OL+PCE) or chia oil and PCE (CH+PCE). In the liver, the gene expression of PPAR-α was higher with CH and CH+PCE. That of SREBP-1 was smaller with OL+PCE and CH+PCE; it increased in Δ5D with CH, but no differences were registered between treatments for Δ6D. The enzymatic activity of desaturases was higher with olive oil (OL+PCE and OL) and in CH+PCE in regard to CH; thus, the joint action of anthocyanins and ALA produced an anti-adipogenic effect. Additionally, the PCE preserved the activity of the desaturases; however, it did not modify their gene expression, which was inhibited by ALA. In the mammary gland, the gene expression of SREBP-1 was higher with PCE (CH+PCE and OL+PCE) while the expression of Δ5D and Δ6D was higher with OL in respect of CH; the gene expression of these enzymes increased significantly upon combining chia oil and PCE.
