In the present study, a canihua protein hydrolyzate (CPH) with antioxidant and antihypertensive activity in vitro of 2.08±0.05 μmol TE / mg protein, 76.72±4.38 percent inhibition of angiotensin-I converting enzyme (ACE) and IC50 of 0.10±0.01 mg/mL, respectively, which was used in rats to evaluate in vivo the possible antihypertensive, hypocholesterolemic and antioxidant activities of an oral administration of 100 mg of CPH protein/kg of body weight. The results showed that the CPH presented antihypertensive activity by significantly reducing the systolic and diastolic blood pressure from 184.4±10.9 to 161.6±8.7 mm Hg and from 155.2±19.4 to 138.8±9.9 mm Hg, respectively, in reference to the hypertensive rats induced with L-NAME. On the other hand, CPH did not present a significant hypocholesterolemic activity according to the lipid profile, significantly reducing serum levels of total cholesterol (TC), total triglycerides (TT) and VLDL-colesterol (VLDL-C); however, the content of HDL-cholesterol (HDL-C) did not increase and there was no significant decrease in LDL-cholesterol (LDL-C) with respect to rats with highcholesterol diet-induced hypercholesterolemia (HCD), presented TC (106.5±12.3 mg/dL), TT (82.3±16.9 mg/dL), HDL-C (40.3±4.9 mg/dL), LDL-C (49.5±13.5 mg/dL) and VLDL-C (16.7±3.3 mg/dL), while rats with HCD presented TC (131.2±9.2 mg/dL), TT (117.2±29.5 mg/dL), HDL-C (53.3±10.2 mg/dL), LDL-C (54.5±14.4 mg/dL) and VLDL-C (23.3±5.7 mg/dL). Finally, the CPH presented antioxidant activity in rats with HCD by maintaining the antioxidant activity of superoxide dismutase (SOD) with respect to the control group, with a value of 1.76±0.19 U/mg protein, despite inducing oxidative stress with the high cholesterol diet
