Food Safety is the guarantee that a food will not cause harm to human health. International organizations such as the World Health Organization (WHO) and the Pan American Health Organization (PAHO), emphasize the importance of Food Safety to prevent the proliferation of ETAs (Foodborne Diseases). Hygiene and Sanitation Procedures are essential to guarantee Safety in Food Industries. Microbiological monitoring are procedures that help us diagnose the degree of contamination in a food, surface or environment; and it helps us to conclude if we are carrying out a correct cleaning and disinfection, or to choose the appropriate method or supplies. In Peru the category of catering is growing and the sanitary certification of these are in charge of the Municipal Authority, that is why companies have the requirement to constantly monitor the hygienic sanitary conditions and develop a Hygiene and Sanitation Plan, to maintain standards of quality and in a main way, to ensure the health of its consumers.
