The objective of the present study was to evaluate the protein quality of pajuro (Erythrina edulis triana) seeds traditionally cooked and extruded. The experiment was carried out in three phases. The first phase consisted of characterizing the seeds. There were obtained to the shell color values of 27.26, 8.60 and 4.81 for L*, a* and b *, respectively; the seeds presented values of 4.35, 2.58 and 1.28 cm, in average, for the length, width and thickness, respectively; additionally, the following values were obtained: 478.96 g for 100 dry seeds, 10.8 % of the entire seed as shell, 89.2 % of the entire seed as cotyledons, 0.983 of water activity and 66 % of moisture. In the second phase, the seeds were extruded under three different temperatures (110, 120 and 130 °C) and two different levels of moisture (13 and 18 %). The productive performance of Holtzman rats fed extruded pajuro seeds containing diets were measured. Registered data was submitted to an ANOVA procedure under a Completely Randomized Design with 3 x 2 factorial arrangement. The treatment that presented better characteristics, physical-chemical as well as animal performance, was the one with seeds that were extruded at 130 ºC and 13 % moisture and the results were: index of expansion, 2.58 cm; index of water absorption, 7.57 % and index of solubility in water, 38.85 %. As for the productive performance, the results were 99.7 g, 7.0 g and 14.24 for the variables feed intake, weight gain and feed conversion, respectively. In the third phase, the protein quality of traditionally cooked or extruded (130 C and 13 % moisture) pajuro seeds were determined. The results were: apparent biological value, 65.52 % and 60.46 %; apparent digestibility, 67.4 % and 65.15 % and true digestibility, 76.74 % and 71.20 % for the traditionally cooked and extruded seeds, respectively. In conclusion, the pajuro seeds present technological favorable characteristics to be considered as a potential source of protein for human consumption, especially when they are traditionally cooked
