The Kano model allows select sensory characteristics that deserve to be included during the product development. The Napping® - Ultra Flash Profile (UFP) helps the sensory characterization of foods using consumers. Furthermore, the External Preference Mapping (EPM) allows research the affective response of consumers by obtaining a spatial representation. The aim of this study was to characterize Peruvian craft beers sensory through the Napping®-UFP and to evaluate the liking of consumers through the EPM. The Kano model allowed to determine the attractive characteristics of the representative craft beers of the Lima market (exotic fruits, fruity smell, Andean cereals and high alcoholic degree) and based on these characteristics a prototype of craft beer was elaborated. With the Napping®-UFP, consumers positioned and described six samples of Peruvian craft beer on a 40 x 60 cm sheet. The coordinates (x, y) of each sample and the sensory characteristics were processed using Multiple Factor Analysis. It was determined that the elaborated prototype presented floral odor, herbaceous odor, fruity odor, golden color, bubbly, exotic fruits and high alcoholic degree. The EPM application showed that the elaborated prototype was located in an area where the percentage of consumers who rated their general taste high was 80 percent. Finally, the evaluation of the consumption habits associated with the six styles of Peruvian craft beer studied, allowed to know that consumers who tend to drink Belgian styles, Indian Pale Ale, American Pale Ale or Irish Red Ale, usually buy beers in bars or supermarkets and frequent craft beer bars or beaches for their consumption (4 - 5 bottles). In contrast, consumers who tend to drink fruity styles or British Brown Ale purchase the beers directly from breweries or convenience stores and consume one bottle.
