The study of new wood species for elaborating barrels for aging of alcoholic beverages is of particular interest in the cooperage sector. The importance of wood stems from its capacity to yield substances, allowing alcoholic beverages to acquire greater quality and variety in aroma, color and flavor during oxidative aging. In this research, extracts from wood chips of four Peruvian forest species were analyzed: Prosopis pallida, Myroxylon balsamum, Manilkara bidentata and Guarea Kunthiana. These species were selected according to different criteria, such as density, lignin content, wood color, resistance to torrefaction, with potential for good mechanical properties, with traceability for commercialization or with the option of using wood residues. The aging product made from torrefied wood, purchased with alcohol (ethanol) derived from sugar cane molasses, aged with the accelerated aging method for a period of 1,5 months, was characterized for phenolic content, color, aging markers (vanillin and syringaldehyde), metals and, finally, sensory analysis. In addition, basic density, thermogravimetric analysis and solubility were determined as wood properties. Statistical results presented insignificant differences between samples aged from roasted and unroasted wood, but greater significant differences between the four selected wood species, such as algarrobo and estoraque. In general, the four woods species presented significant differences that make the aging peculiar to some more distinct from others. These results provide selection criteria to provide authenticity in the composition of the aged alcoholic beverage, opening doors to new flavors, textures and aromas for further commercial studies.
