The present dissertation consists in the assessment and proposal of environmental risks management in a Food and Beverage Service at a Recreation Center. Firstly, the subprocesses were identified through a Process Map, and then the environmental aspects and impacts were identified through Flow Diagrams of the operative and supportive ones. Finally, the method of Failure Mode and Effects Analysis (FMEA) was used to evaluate environmental risks and to those who were critical, a draft Environmental Management Program (EMP) was developed. As a result, it was found that the Food and Beverage Service consists of 10 subprocesses, whose main objective is customer satisfaction. Through the analysis of Flow Diagrams, 37 environmental aspects and impacts were found and then assessed in the FMEA Matrix. The failure modes that were critical, the ones that represent environmental risks, were mainly the depletion of water resources and water, air and soil pollution, being the last one the most critical with a Probable Number of Risk (NPR) of 7000. Objectives, targets, indicators and environmental measures were proposed to these failure modes in the EMP, with an estimated implementation cost of S/. 28726.00 Nuevos Soles, allowing economic feasibility as the amount is within the approved budget for the Recreation Center.
