Twenty-two samples of maize grains (Zea mays L.) belonging to typical races from Arequipa (Arequipeño, Cabanita, Kculli, Coruca and Granada), (provided by the germplasm bank of the Research Program and Social Projection in Corn of the UNALM and collected directly from the Arequipa region), were investigated for the first time in relation to their phenolic profiles by UPLC-PDA and their total anthocyanin contents In addition, the CIELAB color parameters were also measured in grains Phenolic contents in the free and bound fractions varied from 21.01 to 378.49 and from 104.43 to 206.60 mg GAE/100 g dry basis (db), respectivel. Phenolic contents were high in the bound fraction of Arequipeño, Cabanita, Coruca and Granada corn races and represented around 76.7 to 86.4 percent of the total phenolic content (free + bound) whereas this range was lower in samples from de Kculli race (31.04 – 62.47 percent). Total anthocyanin contents varied from 3.28 to 510.51 mg C3GE/100 g db and were the major phenolic compounds in the free fraction of purple corn samples (Kculli race). The analysis by UPLC-PDA allowed to detect mainly hydroxycinnamic phenolic acids such as p-coumaric, ferulic acid and derivatives of p-coumaric, caffeic and ferulic acids in the free fraction, whereas only p-coumaric acid, ferulic acid and a ferulic acid derivative were found in the bound fraction from all samples. Ferulic acid was the major phenolic acid in the bound fraction (72.33 a 156.30 mg/100 g db) and the total phenolic acid contents (free + bound) varied from 109.32 a 215.65 mg/100 g db. Overall, darker corn kernels (with low L* and b* values) were associated to higher phenolic contents, and samples from the Kculli race (Areq-084 and sample Nº 4, provided by the germplasm bank and collected in situ, respectively) showed the highest total phenolic contents, total anthocyanin contents and total phenolic acid contents.
