The aim of this study was to evaluate the effect of habitat change on some nutritional and functional characteristics of quinoa accessions with different saponin content, collected in Cuzco (3234 m.a.s.l.) and Puno (3827 m.a.s.l.) and cultivated in Lima (235 m.a.s.l.). Colour and saponin content were determinated for 100 quinoa accessions. After that, 16 of them, with good agronomical indicators and different saponin content, were selected: Three accessions with low saponin content (<0.11 per cent), six accessions with medium saponin content (0.11-0.39 per cent) and seven accessions with high saponin content (0.40-5.00 percent). Selected quinoa accessions were washed, dried and grounded, for further analysis. The amount of proteins, ashes and total dietary fiber of the majority of crops from the coast were significantly higher (p value <α (0.05)), than their homologs from the Sierra; while the amount of fat, fiber, carbohydrate, total polyphenol content, antioxidant capacity level, in vitro starch digestibility level and in vitro protein digestibility level of the majority of crops from the coast were significantly lower (p value <α (0.05)) than their homologs from the Sierra. Therefore, habitat change is proved to be an influence on some nutritional and functional characteristics of quinoa.
