In the present study the effect of an ethanol extract of Mentha spicata on the oxidative and microbiological stability of a cooked sausage guts guinea pig was evaluated. Viscera, including heart, kidneys, liver and lungs, from Cusco were prepared including onions, potatoes and mint, the latter being replaced by an ethanol extract the same plant (Mentha spicata). Extract is determined phenolics content by the Folin-Ciocalteu, total flavonoids by colorimetric assay with aluminum chloride (AlCl3) and antioxidant capacity by DPPH free radical scavenging activity. Then the ethanol extract was added stuffed into four treatments considering the concentration of phenolic compounds, these were 50, 100 and 150 ppm and a sample control without extract The sausage was stored refrigerated (4° C), carrying out the following measurements: pH, water activity, lipid oxidation (TBARS), aerobic mesophilic count, total coliforms and presence of Salmonella sp. at day 0, 3, 7, 10 and 15 storage. The results were analyzed using a completely randomized design (CRD), using an analysis of variance (ANOVA) for established treatments, to be significant differences (P <0.05) multiple comparison test of Tukey was performed. The results of the evaluation showed significant effect (P <0.05) of ethanol extract of Mentha spicata and its interaction with time. The ethanol extract had a positive effect to promote maintaining the pH, retard lipid oxidation in the three concentrations were applied and inhibited the growth of aerobic mesophilic when applied 0.3 per cent. However, no significant effect on the water activity is observed. Also it could not assess their effect on coliforms and Salmonella sp., because heat treatment product that eliminated microbial load.
