Fish is a healthy and nutritious food; however its consumption is usually less than the recommended (12 kg per year according to FAO). This is due to that the nowadays consumers are looking for easy to prepare or ready to eat products that are sensory acceptable, this encourages the needs for the development of new fishery products that comply with the demands of the consumers. The principal aim of the present research was to use the mechanically recovered meat (MRM) of rainbow trout to prepare a spreadable paste (pate type) and as secondary aims were the evaluation of the principal raw material, the product development and its stability during the cooling storage. The MRM was obtained by a mechanically deboned meat machine, a mixture of natural antioxidants was applied and its proximal composition was analyzed. It was wanted to know the percentage of raw or cooked meat that should be used to make the pate in order to have an acceptable product with a better texture, being better the pate made only with cooked meat. Subsequently, the effect of xanthan and carragel was evaluated in order to improve the texture and maintaining the spreadability. It was observed that the hardness and firmness of the pate increased; however this made it less spreadable, so it was decided not to use stabilizers. The heat treatment study was made in order to determine the optimal parameters of cooking temperature and time, which were 85°C for 22 minutes, and thus eliminating pathogenic microorganisms and minimize heat-resistant microorganisms. Finally, the proximal composition of the pate was analyzed and its stability was evaluated for 4 weeks under refrigerated conditions by measuring the microbial growth, pH, water retention capacity, water activity, color, texture and organoleptic evaluation the product remained stable and suitable for consumption for a period of 2 weeks under refrigerated conditions at 4°C.
