This research had as its main objective to determine the optimal mix or formula for the preparation of sausage sweet dry basis of llama meat, kaniwa pecans and flour by applying the mix design, also to evaluate the influence of the components of the mixture on the variable color, water activity and texture profile of the product. In the first stage we applied the mix design D-Optimal for all three components (llama meat, kaniwa pecans and flour) getting fourteen formulations. For each formulation were evaluated the response variables mentioned above, and these results were determined mathematical models to fit each one, in addition to evaluating the influence of the component of the mixture. At this stage it was found that for the texture profile, only the cohesiveness is able to adjust to a significant mathematical model, also this variable was the influence of the components of llama meat and pecans, in a direct relationship. In the next stage was the optimization of the response variable, using the program Design-Expert®7 feature was used desirability of type “Target value“, in order that the product resembles the pattern; then chose the optimal mix with greater desirability that consisted of 80 percent of llama meat, 20 percent of pecans, and 0 percent of kaniwa flour. Finally, it is valid the optimal mix for each system of food, taking to the sausage from the power system I (grazing on natural pasture) within the limits allowed by the model, which in turn was a sensory evaluation and proximate analysis which resulted in an acceptable product sensorially.
