This work of professional suffiency describes the experience of working as part of the research information gathering team of the International Food Policy Research Institute (IFPRI). The objective was to estimate the amount of white potato lost in the production chain that is mainly directed to the poultry companies of Metropolitan Lima and the main reasons that originated this loss in 2016. This was the first measurement of loss in terms of quantity and value, understood by loss as that food that does not reach its final destination of marketing and consumption. To this end, information was collected from each of the chain's actors: producers, merchants, and chicken shops; through a survey designed by IFPRI itself and the loss estimation method used consisted of the aggregated self-report. As a result, it was obtained that 82.5% of the surveyed producers declared having losses in some phase of; on average the amount lost reached 3,548 kg valued at S / 1,529; It is mainly due to climatic factors and the treatment of the crop; Likewise, the amounts and values of loss per province analyzed are different. In the case of merchants, they lose in the re-selection phase. In chicken poultry, losses occur in the frying and peeling phase. It is evident that efforts to reduce losses should focus on the production phase in order to increase the productivity of producers, the result of which will translate into an improvement in food availability without increasing agricultural inputs, land or crops.
