Was developed breaded rings on the basis of mantle of giant squid or giant squid (Dosidicus gigas) with incorporation of quinoa (Chenopodium quinoa) and amaranth (Amaranthus caudatus L.) in the batter and breaded. The quality parameters evaluated were: viscosity, rate of coating (RC), thickness of the cortex, absorption of oil, moisture and fat content of the bark after frying. The mantle of giant squid was subjected to leaching with acid and alkaline solutions with the purpose of eliminating the acid taste bitter and ammoniacal odor, which managed to eliminate between 90-93 percent of ammoniacal nitrogen and a final concentration of 7.6-21,5 mg N-HN4/100g of muscle. It was determined the Apparent Viscosity (cP) of the mass of batter through a RVDV programmable Rheometer-III Ultra RY82670, USA. The final product was characterized in a physical, chemical, microbiological and sensory, as well was also evaluated the stability of the product in storage frozen at -30ºC for two months. Of giant squid rings fried breaded and prefrito, introduced a content of protein, moisture, fat, ash and carbohydrate values of 11.8; 7.8; 2.0; 61.1 and 17.30 percent, respectively, and a total dietary fiber of 0.67 percent on a dry basis. We obtained a grade of “I love it“ for the attributes evaluated: general appearance, taste and texture, through an affective test of general acceptability and employing a verbal hedonic scale of nine points; in addition, the performance of the development process was 79.1 percent. During the evaluation of the stability of the final product, there was a decrease in the value of the count of aerobic mesophiles, and a slight decrease in the value of pH and moisture content. It was found that the andean grains flour improves the quality parameters of the mass of batter: apparent viscosity, coating, pick-up, thickness of the coverage, moisture content and fat content of the bark after frying.
