The giant squid or squid Dosidicus gigas (D’Orbigny 1835) is an abundant species on the Peruvian coast, of commercial importance and with parasitic infestation records; therefore, it is relevant to evaluate the implications that may affect the safety of squid -based food products. The general objective of the present investigation was to determine the influence of the leaching process on the presence or absence of Anisakis spp. allergens in squid protein concentrate. Two studies were carried out: In the first study, 100 specimens of squid D. gigas gutted and refrigerated, captured in the South Pacific Ocean and landed in the ports of La Puntilla (Pisco), Atico and Matarani (Arequipa), were sampled during the period SeptemberNovember of the year 2019. The LDM (cm) and PEM (Kg) of each squid was recorded. Two species of nematodes were found: Anisakis Type II (Prev: 27%; IMI: 1.56) of zoonotic importance, and the presence of L3 larvae of Hysterothylacium sp. (Prev: 30%; IMI: 1.50). In the second study, nine frozen squid mantles were used (<18 °C ± 3 °C, 4 months) in order to use the methodology recommended by Lazo (2006) but with modifications in two variables: Cooking time and Number of washes, obtaining six protein concentrates. Immunodetection studies of the process samples to quantify allergens were not carried out due to international transport limitations because of the COVID-19 pandemic; however, it was determined that the leaching process of precooked squid muscle would allow the removal of Anisakis simplex allergens in the soluble fraction, as of a comparison with unpublished data of the content of A. simplex antigens in washed hake muscle subjected to successive surimi-type washed performed under conditions similar to the aforementioned methodology. It was determined that under the conditions of the present study, such as the rate and type of initial parasitization of squid (low natural parasitization), the freezing and cooking processes and the successive washing (leaching process) allows the progressive elimination of allergens, so that the residual amount of Ani s 4 and crude extract of A. simplex antigens could be below the detection threshold of the technique (1 ppm)
