The objective of this research was to characterize the essential oils of six oregano ecotypes based on the content of thymol and carvacrol from five Urubamba-Cusco altitudes. The content of oxygenated monoterpene compound (phenols) was made in six ecotypes of oregano (Italian , Elephant ear, Nigra, Chinese, Early flowering 1 and 2). from five altitudes 3042 m.a.s.l. (Urubamba), 3092 m.a.s.l. (Andahuaylillas), 3260 m.a.s.l. (Cusipata), 3386 m.a.s.l. (Jaquijaguana), and 3638 m.a.s.l. (Sicuani). The determination of thymol and carvacrol in samples of essential oil of oregano and other plants, has been carried out by many authors using methods by liquid chromatography HPLC. Differences were found in the concentration of thymol and carvacrol for the six ecotypes and the altitude of origin, which would establish substantial differences between the ecotypes belonging to the same family Lamiaceae. The chemical composition of the essential oil of Origanum. vulgare would vary with the geographical location of the harvest site, the climate, the genetics of the plananta and other ecological conditioning factors. The influence of these factors on the different Origanum vulgare defines their chemotype. Likewise, it was possible to determine that the highest yield of essential oil of oregano was developed at altitudes of 3386 m.a.s.l., (Jaquijaguana) and 3638 m.a.s.l.. (Sicuani), in the ecotype Oreja de Elefante (2.8%), and the lowest yield was developed at the altitude of 3092 m.a.s.l. (Andahuaylillas), in the Nigra ecotype (0.95%); the highest concentration of thymol and carvacrol was developed in the Italian ecotypes (18.4 and 2.04%) and the lowest concentration of the same metabolites was 2.4% thymol and 0.36% carvacrol, in the Chinese ecotype at the altitude of 3386 m.a.s.l.. Thymol and carvacrol give oregano multiple antioxidant, microbiological and food preservative properties, as well as potential applications in perfumery and cosmetics.
