Wheat is a staple food of the Peruvian population and it´s mainly cultivated under rainfed conditions, with recurrent droughts, which put its yield and the food security of extremely poor rural populations at risk. The degree of impact of droughts on wheat is determined by the phenological period with which they coincide, according to each genotype. Therefore, in this research we aimed to determine the effect of water deficit on morphological, physiological, biochemical characteristics and performance components; and based on this, identify the most susceptible phenological state in the species of bread wheat (Tríticum aestivum s sp aestivum L. Var. “Centenario”) and extra-hard wheat (Tríticum turgidum s sp durum L. mutant line “Taray 85”), measured in terms of grain yield (GR). Likewise, the tolerance indices and correlations between the analyzed variables were determined. The experiment was carried out in the Cereal Program of the National Agrarian University La Molina and five treatments were applied, one with normal irrigation and four with controlled water stress during the phenological periods of: tillering, stem elongation, flowering - anthesis and state of watery grain and milky grain. From the results, it is concluded that water stress during the stem elongation stage is the one that most affected the GR, for both species and the most affected characteristics were: plant height, leaf area, osmotic potential, chlorophyll content and free proline content (CPL). Furthermore, CPL was higher in the bread wheat species and showed inverse correlation with the osmotic potential (r= -0.91), RG (r= -0.88) and crop evapotranspiration (r= -0.89). In extra-hard wheat, CPL presented an inverse correlation with relative water content (r= -0.93) and leaf area (r= -0.88).
