The objective of the present investigation was to extend the shelf life of the Cajamarquinas rosquitas using ascorbic acid (antioxidant) and citric acid (synergistic additive) packed in flexible trilaminated films, the accelerated test method was used to measure it. The Arrhenius model was used to associate the reaction rate dependence (k) with storage temperatures, using the linear regression statistical prediction tool with a (p <0.05). The experimental tests were carried out at temperatures of 35, 45 and 55 ° C, the peroxide index being considered as the failure criterion, its critical value being 10 meqO2 / kg. It was found that the useful life of the control was 77 days, when using the first treatment with antioxidant (ascorbic acid 0.1%), it was 88 days and the second treatment with antioxidant plus the synergic additive (ascorbic acid 0.1% and citric acid 0.3%) was 90 days. The treatment with antioxidant (ascorbic acid) plus synergic (citric acid) was the one that had the greatest effect on the life span of cajamarquinas rosquitas, representing an increase of 17% with respect to the control; The antioxidant treatment (ascorbic acid) had a lower effect on the shelf life of cajamarquinas, representing an increase of 14.3% with respect to the control.
