Abstract: El presente trabajo de suficiencia profesional fue desarrollado con el propósito de identificar los errores más frecuentes en el etiquetado de productos hidrobiológicos - conservas de pescado. Las etiquetas analizadas fueron muestreadas en el mercado nacional y para su evaluación se emplearon como principal referencia normativa peruana y normas del Codex Alimentarius; para lo no contemplado en ellas se consultaron lo señalado por Administración de Alimentos y Medicamentos (FDA) o Autoridad Europea de Seguridad Alimentaria (EFSA). Los resultados obtenidos al final del análisis, evidenciaron que los principales errores, entre otros, fueron realizar alegaciones de nutrientes en su etiquetado sin declararlo en la tabla nutricional, colocar el valor de los nutrientes usando términos como mayor, menor y usar símbolos de < o >, utilizar términos no contemplados en la norma. La evaluación detallada de cada elemento colocado en el rotulo buscoprincipalmente mostrar la base normativa sobre la cual se debe realizar el correcto análisis a fin de evitar observaciones por INDECOPI. En materia de etiquetado la normativa peruana tiene muchos vacíos e incongruencias en temas como la declaración de alérgenos, declaración de organismos genéticamente modificados, declaración sobre las grasas trans, declaraciones nutricionales y saludables lo cual genera confusión sobre la evaluación de algunos nutrientes para ello es preciso revisar normas internacionales siendo el sustento de alguna observación realizada por la autoridad competente en materia de etiquetado.
The present work of professional proficiency was developed with the purpose of identifying the most frequent errors in the labeling of hydrobiological products - canned fish. The analyzed labels were sampled in the national market and for their evaluation they were used as the main Peruvian normative reference and Codex Alimentarius standards;for what was not contemplated in them, what was indicated by the Food and Drug Administration (FDA) or the European Food Safety Authority (EFSA) were consulted. Theresults obtained at the end of the analysis showed that the main errors, among others, were making nutrient claims in their labeling without declaring it in the nutritional table, placingthe value of the nutrients using terms such as greater, lesser and using symbols of < or >, use terms not contemplated in the standard. The detailed evaluation of each element placed on the label mainly seeks to show the normative basis on which the correct analysis must be carried out in order to avoid observations by INDECOPI. In terms of labeling, the Peruvian regulations have many gaps and inconsistencies in issues such as the declaration of allergens, declaration of genetically modified organisms, declaration on trans fats,nutritional and healthy declarations, which generates confusion about the evaluation of some nutrients, for this it is necessary review international standards being the support of any observation made by the competent authority in terms of labeling.
