The objective of this research work was to find an optimal mixture made up of quinoa, beans, corn and milk powder, which serves as the basis for the preparation of school breakfasts for primary education. The response surface method was applied, using the Design Expert 8.0 software, simplex centroid type, and 9 response variables were worked with the proximal chemical analyzes and aminograms of each component, taking into account the established restrictions. The optimal mixture presented the following percentages: 36, 10, 34 and 20 percent of quinoa, beans, corn and milk powder, respectively; Likewise, the values of the response variables were: 395.7 kilocalories of total energy, 14.7 % of Kcal from proteins, 20.34 % of Kcal from lipids, 64.91 % of Kcal from carbohydrates, 33.43 % of animal protein from protein total and a chemical computation of Lysine 119 %, Methionine 82 % and tryptophan 96 %, these data being similar to the experimental ones. The biological tests that yielded the optimal mixture were: Biological Value 88.02 %, Digestibility 81.3 %, PER 2.6, NPR 1.48, and NPU 76.22 %. For every 100 g of optimal mixture diluted in 1100 ml of water, the drink was formed that, subjected to a sensory evaluation of 46 students, obtained an acceptability of 94 % as “I like it“ on a three points hedonic scale. In conclusion, the 364.5 ml drinkable breakfast contains 29.2 g of the optimal mixture and 14.5 g of sugar with 173.5 total kilocalories and 4.3 g of quality proteins.
