The effect of antioxidant extracts obtained from three genotypes of mashua (ARB 5241, DP 0224 and ARV 5366) were evaluated. The methanolic (EM) and ethyl acetate (EaE) extracts were obtained using a SEP PAK-C18 purification column and lixiviation of the product with ethyl acetate, respectively. The extracts showed a total content of phenolic compounds of 8.23 and 4.08 mg of gallic acid equivalents/mL respectively; and an average antioxidant capacity of 107.36 and 29.03 μmol of Trolox equivalent/mL respectively. Antioxidant extracts from the three genotypes of mashua (100 ppm-EM, 300 ppm-EM, 600 ppm-EM, 100 ppmEaE, 300 ppm-EaE and 600 ppm-EaE) and 200 ppm-BHT were added separately to soy oil samples and stored for 15 days. The peroxide index, antioxidant capacity and total phenolic compounds were evaluated at 0, 7 and 15 days of storage. Results showed that the 300 ppm-EaE extracts of the three mashua genotypes had lower peroxide index, higher amounts of total phenolic compounds and higher antioxidant capacity than other treatments, indicating a better effect on soy oil in its oxidative stability. Additionally, the antioxidant extracts from the genotype ARB 5241, 200 ppm-EM and 200 ppm-EaE, and the tertiary butylhydroquinone extract, 200 ppm-TBHQ, were analyzed by their separate addition to soy oil during a potato frying process at 180 + 5ºC for 5 minutes with 30 minutes intervals in between frying, evaluating total polar compounds and conjugated di-enes and tri-enes at 0, 1.5, 2.5 and 3.5 hours. The results showed that the ethyl acetate extract from the mashua ARB 5241 genotype had a lower percentage oftotal polar compounds and less formation of di-enes and tri-enes compared to the methanolic and TBHQ extracts, indicating a protective effect on the oxidative stability of soy oil.
