This work is a summary of the experience as Quality, Safety and Hygiene Manager of a primary processing plant, in a private company dedicated to the supply of fresh fruits and vegetables. The company supplies products to service providers as well as home deliveries. The main focus of the work was on leafy vegetables. In addition to presenting the problems that exist due to the insufficient storage and preservation capacity in wholesale markets, and the marketing mechanism that makes operations and quality monitoring difficult in these places. This work seeks to present in a simple way, the process of supply and distribution of leafy vegetables, emphasizing the most important actors, such as farmers, collectors, traders, primary processors and distributors, as well as the primary processing in the plant, where the process of receiving raw material, selection of vegetables, taking into account criteria of size, phytosanitary status, shape, color and firmness and packaging is carried out to protect the product from damage and labeled with traceability information, allowing to know the point of origin of the product. It also explains the distribution of the final product, whether to concessionaires, where high standards of quality and traceability are established, and home deliveries, which present logistical challenges due to the diversity of products, high number of customers, different destinations and reception schedules. It is important to note that emphasis is placed on the implementation of good production and hygiene practices to ensure product safety and quality.
