Objective: determine the in vitro antibacterial effect of the ethanolic extract of Vitis vinifera (grape) seeds against Streptococcus mutans ATCC 25175. Materials and methods: quantitative, experimental; population: 15 Kg of Vitis vinifera (grape); sample of 365.7 g of Vitis vinifera seed; On the other hand, 10 Petri plates inoculated with Streptococcus mutans ATCC 25175 were used. In addition, the phytochemical march was used, diffusion in agar in wells, consisting of groups at 25%, 50% and 75% against (Chlorhexidine). Results: the mean diameters in concentrations of 25%, 50% and 75% of the ethanolic extract of Vitis vinifera (grape) seeds against Streptococcus mutans ATCC 25175 were lower than those recorded by Chlorhexidine. In numerical examination through ANOVA test it was (p<0.05) compared to the control set. In addition, the presence of tannins, phenolic compounds, α, β-unsaturated lactones, alkaloids, anthocyanins and reducing sugars was identified. Conclusion: the ethanolic extract of Vitis vinifera (grape) seeds presented antibacterial effect at 25%, 50% and 75% against Streptococcus mutans ATCC 25175.
