Abstract: El presente trabajo de investigación busca determinar la factibilidad en la instalación de una planta procesadora de café molido gourmet en el Perú. Para establecer la factibilidad del proyecto se realizó un exhaustivo estudio de mercado, se determinó el proceso productivo y se evaluó la inversión, costos y presupuestos del estudio. El producto ofrecido es una bebida energética con gran potencial en el mercado peruano, la cual permite reducir medidas corporales y aumentar la fuerza y vitalidad física. El mercado objetivo está conformado por adultos pertenecientes a los niveles socioeconómicos A y B, que residen en Lima Metropolitana y tienen la particularidad de consumir café molido, regularmente. En el año 2019, el café molido y tostado creció 10,3% en los niveles socioeconómicos A y B. El crecimiento es más significativo en Lima, donde se concentra el 80% de su valor. La planta estará localizada en la ciudad de Quillabamba, Provincia La Convención (Cusco) debido a la disponibilidad de materia prima y mano de obra, costo del terreno, efectos del clima y otros factores evaluados. Se estimó adquirir un terreno de 1 200m2. El tamaño de planta está definido por el tamaño-mercado con una demanda inicial de 68 655,75 kg (274 623 bolsas) y final de 74 857,53 kg (299 431 bolsas). El proceso de producción es semiautomático y cuenta con tecnología flexible acreditada por maquinaria de origen extranjero. La capacidad real de la planta está determinada por la operación de tostado (cuello de botella) con una producción anual de 163 537,92 kilogramos (654 151 bolsas); garantizando así, el cumplimiento de la demanda del proyecto. La inversión estimada ronda los S/ 1 854 609,51, 60% financiado mediante un
préstamo y el restante (40%), por aporte de capital propio. Los resultados de la evaluación económica y financiera manifiestan la viabilidad del proyecto, pues se obtuvo un VANE y VANF de S/ 1 239 312,27 y S/ 1 118 970,54, respectivamente. Además, un TIRE del 28,41% (TIRE > CPPC) y TIRF del 51,81% (TIR > COK), y la inversión se recupera antes del cuarto año. Por último, los ratios financieras indican que existirá buena liquidez, una capacidad de pago oportuna por deudas y un crecimiento económico significativo.
The following research work aims to determine the feasibility regarding the installation of a gourmet ground coffee processing plant in Peru. In order to accomplish the above, an exhaustive market study was carried out, the production process has been established and the financial investment as well as the relation to a fixed budget were assessed. The product is an energizing beverage, with great potential in the Peruvian market, which allows reducing body measurements and increasing physical strength and vitality. The target market consists of adult men and women (18+) belonging to socioeconomic levels A and B, who live in the city of Lima and consume ground coffee regularly. In 2019, ground and roasted coffee product intake increased 10,3% in socioeconomic levels A and B. Most significant growth is in Lima, where 80% of its value is focused. The industrial plant will be located in the city of Quillabamba, La Convención province (Cusco) due to a series of factors like raw material availability, labor force availability, land cost, weather, among others. A 1 200m2 approximated area is required to start operations. Plant size was fixed by market size with a 68 655,75 kg (274 623 bags) initial demand and a 74 857,53 kg (299 431 bags) final demand. The production process is semi-automatic and has flexible technology backed by foreign origin machinery. The real capacity of the plant is related to the roasting operation (bottleneck), having 163 537,92 kilograms (654 151 bags) annual production; and thus, fulfilling the project’s product demand. Monetary investment 1 854 609,51 PEN, 60% being financed and the remaining 40% managed by own capital. The results of the economic and financial evaluation show the project’s viability, having a VANE and VANF of 1 239 312,27 PEN and 1 118 970,54 PEN, respectively.
