Abstract: El pan es uno de los productos de la canasta básica alimenticia; por ello, con el fin de
brindarle a este alimento una nueva versión, promover el consumo de un producto
netamente peruano y contribuir con la salud de los ciudadanos de Lima metropolitana del
nivel socio económico A y B (6 años a más) nace la idea del presente proyecto cuyo
objetivo general es determinar la viabilidad técnica, económica, financiera, social, medio
ambiental para la implementación y operación de una planta de producción de pan a base
de harina de maíz morado.
La planta de producción estará ubicada en Lurín y contará con un área de 1 510
m2. Asimismo, dentro del proceso productivo existirán actividades clave (horneado,
fermentado, entre otros) las cuales estarán regularizadas con la Norma Sanitaria para la
Fabricación, Elaboración y Expendio de Productos de Panificación, Galletería y
Pastelería (NTP 206.018.1984); gracias a ello, se garantizará la calidad del producto
horneado.
La comercialización del producto se realizará a través de supermercados,
hipermercados y bodegas a un valor de venta de 3.29 soles para el intermediario y un
precio de venta de 5 soles para el consumidor final.
Gracias a lo mencionado anteriormente, se demostró la viabilidad del proyecto
obteniendo un valor actual neto financiero positivo de S/ 6 419 290 una tasa interna de
retorno financiero mayor al costo de oportunidad (20.55%) de 62% y un beneficio-costo
de 3.07; por lo tanto, se demostró que el proyecto es rentable.
Finalmente, el impacto social generado por el proyecto será positivo, dado que
contribuirá con 26 puestos de trabajo. Asimismo, se establecerán políticas de mitigación
para reducir el impacto medio ambiental obtenido dentro de la planta de producción.
Bread is one of the products of the basic food basket; therefore in order to give this food a new version, promote the consumption of a purely Peruvian product and contribute to the health of the citizens of metropolitan Lima of socioeconomic level A and B (6 years and older) the idea of this project was born whose general objective is to determine the technical, economic, financial, social and environmental feasibility for the implementation and operation of a bread production plant based on purple corn flour. The production plant will be in Lurin and will have an area of 1 510 m2. The production process will include key activities (baking, fermentation, among others) which will be regulated by the Sanitary Standard for the Manufacture, Preparation and Sale of Bread, Biscuit and Pastry Products (NTP 206.018.1984) this guaranteeing product quality. The product will be marketed through supermarkets, hypermarkets, and bodegas at a sales value of 3.29 soles for the intermediary and a sales price of 5 soles for the end consumer. Thanks to the above, the viability of the project was demonstrated obtaining a positive financial net present value of S/ 6 419 290 a financial internal rate of return greater than the opportunity cost (20.55%) of 62% and a benefit-cost of 3.07; therefore it was demonstrated that the project is profitable. Finally, the social impact generated by the project will be positive. since it will contribute 26 jobs. In addition, mitigation policies will be established to reduce the environmental impact of the production plant.
