This study evaluates the commercial, technical, economic, financial and social viability of the installation of a packed pasteurized egg white regarding the existence of demand, raw materials and adequate technology at competitive costs in the current situation in the country. The demand in the last year of the project is 331 636 units of finished product. In order to get these figures we started our segmentation with the physically active population of Peru, then, we segmented the market geographically, psychographically and demographically, and finally, a survey was carried out to determine the intensity and purchase intention. Furthermore, followed by the analysis of macro localization and micro localization, which considered as main factors closeness to the market, availability of raw material and closeness to raw material, it was determined that the best option to install the production plant was in Chorrillos district, within Metropolitan Lima. The plant size is 61 kg of finished product per hour at the technological level and 47 kg of finished product per hour at the market level. The production process is based on stages of pouring, pasteurization, packaging, capping and packing, pasteurization being the bottleneck and main stage of the process. The dimensioned for the production plant is 338 square meters. Finally, the short and long-term investment of the project is S/ 531 411, with 30% of the financing being from financial institutions and 70% of our own contribution. A net present value of S/ 1 585 466 was obtained in the economic cash flow, an internal rate of return of 72,8%, a benefit / cost of 3,98, recovering the investment in 2 years and 4 months. While, on the part of the financial fund flow, a net present value of S/ 1 577 280 was obtained, an internal rate of return of 88,6%, a benefit / cost of 5,27, recovering the investment in 2 years, everything was analyzed at a capital opportunity cost of 15,08%. For the social evaluation, a capital density of S/ 40 878, a capital intensity of 0,05 and a capital product ratio of 20,49 were obtained.
