Estudio de prefactibilidad para la instalación de una planta de producción de filete de trucha arcoiris (Oncorhynchus mykiss)

Abstract

El presente trabajo busca analizar la viabilidad de la implementación de una planta procesadora de filetes congelados de truchas mediante el uso de técnicas y herramientas propias de la ingeniería industrial. En primer lugar, se explicará la problemática identificada que será aprovechada y servirá de sustento base para la investigación. En segundo lugar, se explicará la determinación de la demanda del proyecto mediante herramientas de investigación de mercado y marketing; así mismo, la estrategia a utilizar para incursionar en el mercado objetivo. Por otro lado, mediante los métodos de localización de planta se establecerá la macro y micro localización de la fábrica en base a factores debidamente justificados y jerarquizados. Luego, a través de técnicas de disposición de planta se realizará el cálculo del tamaño de planta y la capacidad instalada propuesta; así como, los aspectos a tener en cuenta en materia de seguridad industrial, gestión de la calidad, logística, planeamiento de la producción y otros aspectos de vital importancia para el funcionamiento de la factoría, para finalmente brindar el plano a escala detallado de la planta propuesta para el proyecto. Después, se explicará la estructura organizacional a tener en la compañía tomando en cuenta las leyes que son aplicadas por el estado peruano; así mismo, se propondrá un manual de funciones de todos los puestos presentes en la empresa y el organigrama correspondiente. Finalmente, se evaluará la factibilidad económica y financiera del proyecto en base al análisis de los flujos de fondos económicos y financieros del proyecto obtenidos a partir de los estados de resultados propuestos, y en la parte final de la investigación se mostrarán las conclusiones y recomendaciones a las que se llegaron luego de concluirla.

The present work seeks to analyze the feasibility of the implementation of a processing plant for frozen trout fillets through the use of techniques and tools of industrial engineering. In the first place, the identified problems that will be exploited and will serve as a basis for research will be explained. Secondly, the determination of the demand of the project will be explained by means of market research and marketing tools; likewise, the strategy to be used to enter the target market. On the other hand, by means of plant location methods, the macro and micro location of the factory will be established based on duly justified and hierarchical factors. Then, through plant layout techniques, the calculation of the plant size and the proposed installed capacity will be carried out; as well as the aspects to take into account in terms of industrial safety, quality management, logistics, production planning and other aspects of vital importance for the operation of the factory, to finally provide the detailed scale map of the plant proposal for the project. Afterwards, the organizational structure to be had in the company will be explained taking into account the laws that are applied by the Peruvian state; Likewise, a manual of functions of all the positions present in the company and the corresponding organization chart will be proposed. Finally, the economic and financial feasibility of the project will be evaluated based on the analysis of the economic and financial flows of the project obtained from the proposed results statements, and the conclusions and recommendations will be shown in the final part of the investigation. to those who arrived after concluding it.
