Abstract: El presente estudio de prefactibilidad tiene como principal objetivo determinar la viabilidad de mercado, tecnológica, económica, financiera, medioambiental y social para la instalación de una planta productora de snacks de frutas liofilizadas.
Se presenta este estudio preliminar desarrollado en un contexto donde la presencia de la mala alimentación ha llevado a un aumento de diversos problemas y enfermedades en la población de Lima Metropolitana, y esto debido al consumo de productos con altos niveles de azúcar, químicos e insumos artificiales.
El producto va dirigido a personas de Lima Metropolitana entre las edades de 18 y 45 años que pertenecen a los niveles socioeconómicos A, B y C y que llevan un estilo de vida saludable. En base a los criterios, se pudo obtener para el primer año una demanda especifica del proyecto de 189 276 bolsas.
Se determinó que la localización óptima para la instalación de la planta industrial es en el distrito de Ate, en el departamento de Lima. Adicionalmente, se obtuvo que el tamaño de la planta está determinado por el tamaño de mercado.
De acuerdo con la evaluación de la ingeniería del proyecto, se determinó que la capacidad instalada del proyecto es de 13 096 kg al año que está determinada por el proceso de liofilización. Además, la disposición de planta y el cálculo del área requerida representa un total de 900 m2.
Por último, se realizó la evaluación económica-financiera del proyecto donde se estimó un monto de inversión de S/ 833 355. Para determinar la rentabilidad del proyecto, se evaluaron los principales indicadores y como resultados económicos se obtuvo un VAN de S/ 515 993 y TIR de 43%; por otro lado, para los resultados financieros se halló un VAN de S/ 615 699 y TIR de 60%, concluyendo que el proyecto es rentable. Con respecto a indicadores sociales, se determina un impacto positivo ya que se generan 18 puestos de trabajo y se tiene una intensidad de capital de 0,17%.
The main objective of this pre-feasibility study is to determine the market, technological, economic, financial, environmental and social viability for the installation of a freeze-dried fruit snacks production plant. This preliminary study developed in a context where the presence of poor nutrition has increase in different problems and diseases in the population of Lima Metropolitana, and this due to the consumption of products with high levels of sugar, chemicals, and artificial inputs. The product is aimed for people in Lima Metropolitana between the ages of 18 and 45 who belong to socioeconomic levels A, B, and C and who lead a healthy lifestyle. Based on the criteria, a specific demand for the project of 189 276 bags could be obtained for the first year. It will be stated that the optimum location for the installation of the industrial plant is in the district of Ate, in the department of Lima. Additionally, it was found that the size of the plant is determined by the size of the market. According to the evaluation of the project engineering, the installed capacity of the project exceeds 13 096 kg per year, which is determined by the freeze-drying process. In addition, the plant layout and the calculation of the required area represent a total of 900 m2. Finally, the economic-financial evaluation of the project was carried out, where an investment amount of S/ 833 355 was estimated.
