Abstract: El objetivo del presente estudio es determinar la viabilidad comercial, técnica, económica, financiera y social para la instalación de una planta productora de barras de chocolate sin lactosa. Se producirán barras de chocolate sin lactosa de 50 g envasadas en cajas de 12 unidades. El mercado objetivo son personas de Lima Metropolitana, correspondientes al nivel socioeconómico A y B, intolerantes a la lactosa y con un estilo de vida que busca opciones convenientes para la salud al momento de buscar productos alimenticios. El producto será comercializado en supermercados y tiendas de alimentos naturales. El valor de venta será de S/ 4,50 la unidad al canal detallista o S/5,90 al público en general.
La planta de producción se instalará en el distrito de Lurín, en la provincia de lima, ocupando un área total de 816 m2. El tamaño de planta es de 8,13 kg/h de producto terminado cubriendo en su totalidad la demanda del mercado. En cuanto a inversión, el proyecto requiere un total de s/1 400 484,76. Se ha considerado un 12.63% de financiamiento, con un horizonte de 5 años, 2 meses de gracia parcial y 17.50% de tasa efectiva anual. Al realizar la evaluación económica se obtuvo un valor actual neto de S/620 653,09, un 40,09% de tasa interna de retorno, un 2,22 de relación beneficio-costo y un periodo de recupero de 2 años y 2 meses. En cuanto a la evaluación financiera, se alcanza un valor actual neto de S/1 499 328,71, un 63,87% de tasa interna de retorno, un 2,224 de relación beneficio-costo y un periodo de recupero de 1 años y 11 meses aproximadamente.
The objective of this study is to determine the commercial, technical, economic, financial and social viability for the installation of a manufacturing plant that produces lactose-free milk chocolate bars, taking into consideration the existence of an important demand, availability of raw materials, adequate technology and a competitive price in Lima, Perú. The chocolate bars will weigh 50 g each and will be packed in boxes of 12 units to warranty an optimal transportation to the different stores. The target market is people from the city of Lima, that belong to socioeconomic levels A and B, are lactose intolerant and have a lifestyle that seeks for healthy options for their daily meals. The product will be sold exclusively in 1 local supermarket chain: Wong, and healthy food local stores. The sale value to the retail channel will be S/ 4,50 per unit or S/5,90 to final consumers. The manufacturing plant will be installed in the district of Lurin, province of Lima; and will occupy a total area of 816 m2. The plant size is 8,13 kg/h of chocolate bars, fully covering the market demand. Regarding investment required, the projects need a total investment of S/1 400 484,76.
