The product “Nutritious Gummies” are a treat that is made of dehydrated and powdered vegetables and fruits, which preserve their vitamins and minerals during the process to finally become into gummies that can be savored as a healthy snack. In recent years, rates of chronic malnutrition, anemia or even overweight have been increasing; factors such as poor diet are the direct causes. Zoomed into this problem, the idea came to provide a pre-feasibility study for the installation of a facility that produces nutritious gummies based on dehydrated vegetables and fruits to be delivered in packages of 50 g, the project is sustainable due to the purchase rate of 39,90% in our target audience: population of Lima Moderna between 6 and 39 years old, belonging to the socioeconomic status A and B, so that our demand in 2021 will be 20 849 kg of gummies that are equivalent a 416 984 packages of 50 g. After the demand for the project was calculated, a following research to set the location determined that the most suitable place for the plant to be located, is the city of Lima; Ate district due to the multiple benefits that this place offers regarding the evaluation factors in the study. According to the Guerchet diagram, an area of 390 m2 was available, the installed capacity of the plant was limited by the dehydrator and the average production of 463 706 packages of 50g of gummies per year. The production of these gummies must be under exhaustive quality controls throughout the whole process, a HACCP plan should be implemented and good practices established by the competent authorities must be followed. The environmental impact was also evaluated through the Leopold matrix and corrective measures were proposed in each part of the process. Regarding safety and health at work, the risks were identified, estimated and a maintenance plan was established for each of the machines used in production. Additionally, it was determined that 5 operators would work in the plant and 7 people in the administrative area and the physical distribution of each of these areas in the plant was designed. Finally, the economic research was carried out to determine the viability of the project and the results showed these characteristics: the total investment required for the project is S/ 2 936 033,55, the most profitable entity to request bank financing for 35% of the total investment. Likewise, the recovery period of the investment would be 4 years and 10 months; and the profit of S/ 1,21 will be obtained for each S / 1,00 invested. The added value generated by the project would be S/ 361 357,56 during the 5 years project operation and the IRR of 18,90 %, these results prove that the project is economically viable.
