Currently, the anchovy is one of the most abundant fishing resources in Peru; however, it is mostly used for the production of fishmeal and fish oil, despite being a superfood that provides great nutritional benefits. The purpose of this proposal is to determine the commercial, technical and economic feasibility for the installation of an anchovy hamburger production plant. The research aims to take advantage of the great availability of existing anchovy and turn it into a product with high nutritional value and accessibility, aimed at socioeconomic levels C and D. Through a market study, it was found that there is a potential market in Lima Metropolitana and it was possible to determine a demand for 244 489 bags for the last year of the project. The plant will be located in Huarmey, in the Huarmey province of Ancash department, which will have a capacity of 303 333 bags per year. This location was chosen, since there is the port of Chimbote, which has a high level of artisanal fishing for the resource. Regarding the technology and machinery to be used, it has been determined that there are no limitations. In addition, the relevant technical standards and the HACCP system have been considered to maintain excellent quality and safety in the product. This project requires an investment of S/ 2 184 971,90 with an OCC of 13,69%. Through an economic and financial evaluation, a financial NPV of S/ 624 467,32 and a financial IRR of 27% were obtained, recovering the investment in 4,01 years, which determines the economic viability of the project. Finally, when preparing a social evaluation of the project, it is identified that for every S / 1,00 invested, the project generates S/ 2,45 of added value, contributing to the project's area of influence.
