A prefeasibility study was carried out for the installation of a precooked chorizo producing plant based on guinea pig meat enriched with quinoa, which determined the market, technical, economic, financial, environmental and social viability of the project. The development of this work, arose from the problems identified in Peru, in which, according to the Pan American Health Organization and figures obtained by the National Institute of Statistics and Informatics, there is a large percentage of diseases related to cancer, diabetes, chronic and cardiovascular respiratory diseases and chronic malnutrition in children. Therefore, the aim was to develop a healthy product, given the great health benefits of guinea pig meat and quinoa, as a source of proteins and fatty acids and essential amino acids, among other contributions. A market study was carried out, in which Metropolitan Lima was defined as the target market, specifically zones 6 (Jesús María, Lince, Pueblo Libre, Magdalena and San Miguel) and 7 (Miraflores, San Isidro, San Borja, Surco and La Molina), socioeconomic levels A, B and C, ages between 20 and 64 years and sophisticated and modern lifestyles. In addition, demand for the project was determined, which turned out to be 36 675 boxes of finished product in the last year of service life, 2024. On the other hand, a total investment of S/4 692 945 was calculated, where 68,49% is equity capital and 31,51% is loan. In addition, a COK of 19,56% and a CPPC of 17,27%. The economic assessment obtained a NPV of S/5 521 679, an IRR of 54,55%, B/C of 2,18 and a recovery period of 2,70 years. While the financial assessment obtained a NPV of S/5 797 205, an IRR of 68,26%, B/C of 2,80 and a recovery period of 2,23 years. By achieving a positive NPV, an IRR greater than COK and a B/C greater than 1, it can be inferred that this project is feasible and viable. Finally, a social assessment was carried out, resulting in an actual value added of S/27 782 706.
