The main objective of this research work is to determine the market, economic, financial, technological, social and environmental feasibility for the installation of a plant for the production of vegetable beverages based on carya illinoinensis, a product that will be known as pecan “milk“. The quantitative and qualitative market study determined the segmentation and demand of the project for its life horizon. The sales distribution will be oriented to the modern market and will cover the demand of 339 288 units for the first year. On the other hand, the plant size was determined, evaluating sizes such as market size, productive resources, technology and break-even point. It was determined, then, that the limiting size is the market size with 374 793 units and the break-even point above which profit would be 179 530 units. In the plant layout, using Guerchet's quantitative method, it was determined that the production area within the plant would be 84 m2. Consequently, considering administrative areas, warehouses, bathrooms, among others, it was established that the total area of the plant would be 688 m2. Regarding the evaluation of the project from the economic and financial aspects, a total investment of S/ 1 994 004 was determined. Obtaining a financial NPV of S/ 2 542 958 and a financial IRR of 86,97%. The investment made at the beginning of the project would be recovered in a period of 2 year and 8 months, and the benefit-cost ratio would indicate a profit of S/ 4,13 for each S/ 1 invested. Finally, the social evaluation calculated an added value generated by the project of S/ 6 352 820 during the years of the plant's life horizon, demonstrating the positive impact on the society in which the project will operate.
