In this project, a preliminary study was carried out for the installation of a giant white corn production plant from fried Cusco. The subject investigated arises from the need to give greater added value to native Peruvian products and their great potential in the Premium snacks market. The market study defines and establishes the product, its properties and the geographic area covered by the research. Subsequently, the sector is analyzed, the historical demand and the final demand of the project, which in its fifth year will have doubled the initial quantity, going from 16 tons to 39 tons, an amount that represents a 6% market share in the fifth year. All this is achieved thanks to the product on which the study focuses, which is the Giant White Corn of Cusco, which thanks to its designation of origin gives a greater added value to the product and makes it exclusive. The market to be served is the population between 13 and 60 years of age of socio-economic level A and B, who consume snacks. In the chapters on location and plant size, the different factors are analyzed to determine the best location of the processing plant, obtaining as a final result the town of Chilca, located in the province of Lima, subsequently the optimal plant size of 355 is identified., 36 m2 taking into account the restrictions established by current technology, productive resources, the equilibrium point and the market. In the engineering chapter of the project, the product and the appropriate technology for its production are technically defined; The technical process is also established with the specifications of each selected machine and the installed capacity. In the same way, the possible environmental impact and the production program are identified with an adequate control of quality, safety, maintenance and implementation of services. Likewise, the layout of the plant and the project implementation schedule are determined. It is finally concluded that there is adequate technology for the elaboration of the product that will allow the quality standards in an optimal way and with adequate efficiency. 4 In the chapter on economic and financial aspects, the investments necessary for the project are analyzed, as well as the production costs associated with the operation and the operating and financial budgets with their respective cash flows (economic and financial). Finally, it is evaluated economically and financially using ratios and indicators that allow determining the viability of the project, such as the economic NPV S/ 473 385,51 and financial NPV S/ 513 886,46. It is also available all the analysis that shows the financial IRR of 41%, or the recovery time of 3 years, in addition a sensitivity analysis is included which will allow you to know the impact of some important variables as well as a variation in the price of 50 cents or a variation in demand of 10%, obtaining as the most acid result a financial IRR of 8,08%.
