The purpose of this research work is to study the commercial, technical, economic and financial viability of the installation of a plant producing hamburgers based on beautiful fish and enriched with yuyo, which seeks to satisfy the need to feed nutritionally and balanced, since it contains a high percentage of Omega-3, proteins and minerals such as iron and iodine. On the other hand, the project's target market is made up of customers from socioeconomic levels A, B and C who attend supermarkets located in Metropolitan Lima and who consider leading a healthy lifestyle. The project demand for the year 2022 is 110,917 units of finished product, at a skim price of 19.50 soles to the final consumer, considering a supermarket price of 13.35 soles. In the location chapter it is determined that the plant will be in the Villa El Salvador district located in the province of Lima, and its size, limited by the market, will be 110 917 bags of hamburgers. In the project engineering chapter, quality analysis was carried out, through compliance with the NTP and HACCP, the environmental impact of the project, and occupational health and safety. In addition, prepare the production schedule and requirements for the 5-year life of the project. Finally, the design of a floor plan with an area of 420 m2. Finally, to finance the project an investment of approximately 1.12 million soles is needed, which will generate value for the stakeholders. Based on the results of the financial evaluation, financial NPV (NET PRESENT OF VALUE) of 0.557 million soles and a financial IRR of 44.20%, economic viability is demonstrated.
