The objective of this study was to be able to publicize, reassess and commercialize an endangered food, pajuro, from the production of chocolate-flavored pajuro “milk”, in a 1-liter presentation in laminated bags. This product will benefit consumers with its high nutritional value, quality of inputs, a responsible product with the environment at competitive prices. The study was carried out to verify its acceptance in the market, technical, economic, financial and social viability of this new product. Based on the results obtained in the polls, it was found that this new product will have a favorable acceptance in the market, with a purchase intention of 55%. The location of the plant had as its main axes the following factors: availability of raw material, water supply, available amount of labor, among others. It was decided to build the production plant in the district of Huanchaco, department of La Libertad. The limiting factor of the project is the demand for the product and the size of the plant was determined by this last factor. It was determined that the project demand for the year 2028 will be 1,691,830 bags. After conducting the economic and financial evaluation, it was established that the total investment of the project will be S /. 3,169,903.89, 35% will be financed by a financial entity within a period of 8 years. It was found as economic indicators of the project, the NPV with a value of S /. 6,311,757.40, the IRR with a value of 43.00% and a recovery period of 2 years, 8 months, and 6 days. The sensitivity analysis determined that the sales value and production cost are the most sensitive variables of the project. These indicators mentioned determined the correct viability of the project.
