In this work, the phases of the process for the implantation of a plant that produces a protein consolidation based on anchoveta in the presentation of sausages will be developed. After carrying out the study, it can be concluded that the target market is the group of people with healthy eating habits in Metropolitan Lima, belonging to sectors A and B. This population represents 28% of the total of these sectors. With a demand of 1 225 550 packages of finished product in the year 2022. In addition, according to the analysis of macro and micro location, it was determined that the most suitable location for the plant is the industrial area of Pisco, belonging to the department of Ica. On the other hand, since the company of the present work is small, a reduced organization chart was proposed, with a total number of 18 workers. This, because it does not take a large workforce to carry out the company's processes. Some of the collaborators fulfill more than one function, thus cutting unnecessary work areas. Likewise, it was concluded that the research project is profitable, since it obtained an economic VAN of 710 810,44 soles, a financial VAN of 773 742,54 soles and, a financial TIR of 26% (higher than the COK=14,4%) and an economic TIR of 21,61% (higher than COK=14,4%)
