Abstract: El presente estudio de prefactibilidad busca demostrar la viabilidad de la implementación
de un servicio de venta de batidos nutricionales en un food truck. Este formato ofrece un
batido a base de quinua o kiwicha, acompañado de frutas de estación, leche y la opción
de añadirle “toppings”; es además servido en un vaso biodegradable hecho de fécula de
maíz.
El público objetivo del servicio son personas entre los 15 y 59 años que
pertenezcan a los niveles socioeconómicos A y B en los distritos de Lima moderna. Para
determinar la demanda se consideró las respuestas de la encuesta realizada a 385 personas
de nuestro público objetivo. Además, se evaluó una ubicación rotativa del food truck en
base a las ferias de food trucks más recurrentes de la zona, estimándose así una demanda
de 46 697 batidos anuales.
Para calcular el tamaño del servicio se evaluaron los factores de mercado,
recursos, tecnología, inversión y punto de equilibrio. Este último resultó ser el limitante
con un mínimo de 35 344 batidos al año; y el máximo, el mercado con 52 286 batidos.
La organización del servicio contempla 1-2 operarios (dependiendo de la
demanda), 1-2 cajeros, un administrador y su asistente. Asimismo, el food truck tendrá
un área de 4.7 m2 mientras que el local contará con un área de 36 m2 e incluirá una oficina
para el administrador, servicios higiénicos, un almacén de insumos y una cocina para la
preparación de estos
Por último, se pudo demostrar que el proyecto es económicamente viable, ya que
obtuvimos una TIR de 39% mayor al COK (17,75%) y un VANE de S/76 413; y
financieramente, debido a que la TIR obtenida fue de 51%, mayor al COK, y el VANF
de S/81 617.
This pre-feasibility study aims to demonstrate the feasibility of implementing a nutritional shake service sold in a food truck. This format offers a shake made of an organic Andean cereal (quinoa or kiwicha), accompanied by seasonal fruits, milk, and the option of adding toppings; it is also served in a biodegradable glass made of cornstarch. The service offered will be aimed at people between the ages of 15 and 59 who belong to socioeconomic levels A and B in the districts of modern Lima. To determine the demand, we considered the responses of the survey conducted to 385 people from our target audience. In addition, a rotating location of the food truck was evaluated based on the most recurrent food truck festivals in the area, therefore, a demand of 46 697 annual shakes was estimated. To find the service dimension, market, resources, technology, investment, and the breakeven point factors were evaluated. This last one was determined as the limiting factor with a minimum of 35 344 shakes per year whereas the maximum is the market with 52 286 shakes a year. The organization of the service includes 1-2 operators (according to demand), 1- 2 cashiers, a manager, and their assistant. The food truck will have an area of 4.7 m2 while the premises will have an area of 36 m2 and will include an office for the administrator, bathrooms, a warehouse for supplies and a kitchen. Finally, it was demonstrated that the project is economically viable, since an IRR of 39% greater than COK (17,75%), and an economic NPV of S/76 413 were obtained; and financially, because the IRR was 51%, (greater than COK) and the financial NPV of S/81 617.
