This research work started from the lack of control in the food manufacturing processes in the company PROINKA INVERSIONES EIRL where there is no previous updated record. That is why the proposal for the implementation of the system for the analysis of hazards and critical control points of extruded food was made in the company PROINKA INVERSIONES EIRL following the methodology of the Supreme Decree N º007-98-SA: Regulation on Sanitary Surveillance and Control of Food and Beverages Therefore, the 7 principles and 12 steps were developed in order to identify the processes where there may be some type of contamination and also have a control of these. From the analysis carried out in the company PROINKA INVERSIONES EIRL We were able to observe that the company has 12 stages, 23 food hazards have been identified, classified as follows: 8 Physical hazards, 4 Chemical hazards and 11 Biological hazards, of all of them 4 Critical Control Points (CCP) were determined, which are found in extruded, extruded cooling, confit cooling and labeling sealing for which specific and efficient technical parameters were established such as: temperature, humidity and time, in their minimum and maximum ranges; posing for PCC1, where there is a biological hazard due to microorganisms, for which a minimum temperature of 135 ° C and a maximum of 150 ° C was considered. For the PCC2 with biological danger due to the presence of mold, given the prolonged exposure to humidity, a minimum humidity of 5% and a maximum of 8% were established for a minimum time of 5 hours and a maximum of 7 hours. for the PCC3 with biological danger due to the presence of mold, given the prolonged exposure to humidity, a minimum humidity of 3% and a maximum of 5% were established for a minimum time of 5 hours and a maximum of 7 hours. For the PCC4 with a biological hazard caused by a bad seal, a control of preheating sealers was considered with a range of 5 for a period of 15 minutes in the company PROINKA Inversiones EIRL. Finally, 22 records / control formats necessary to establish monitoring evidence of the extruded foods were built in the company PROINKA Inversiones EIRL, including four records for the CCPs found. Additionally, it has been possible to develop the prerequisites such as: a Manual of good food handling practices (GMP Manual) and the Manual of Standardized Sanitation Operating Procedures (Manual OPS). Complementing the above, it has been possible to obtain two Hygienic Sanitary evaluations, the initial one, which gave us 293 points out of a total of 500, which corresponds to 58.6% in the Defective category and the second evaluation, the product of having started this entire process of implementation of the Food Safety System, which gave us a significant increase, especially in the part of Staff Hygiene and Food Safety, giving a total of 377 points, equivalent to 75.4% corresponding to the Good category. This proposal helps the company PROINKA INVERSIONES EIRL to comply with the current regulations in force, which require food companies to have a sanitary control and record of incidents.
